            Chickpea and bulgur salad with mint





Ingredients:
Fine bulgur, rinsed 150g
Chickpeas, drained and rinsed 400g
Red onion, finely chopped 100g
Toasted sesame seeds 30g
Cloves garlic, crushed 30g
Olive oil 75ml
Lemon juice 40ml
Parsley, finely chopped 60g
Mint, coarsely chopped 30g
Sea salt 10g
Black pepper 10g
Paprika 10g
Preparation:

1. Place bulgur in a bowl and pour in boiling water and leave it to soak until it doubles in volume. Place chickpeas in a bowl with the onion, sesame seeds and garlic, and mix with olive oil and lemon juice.
2. When bulgur is cool, remove any excess water and add to the chickpeas. Add the chopped parsley and mint to the bowl. Toss well, season with salt, pepper, and sprinkle the paprika over before serving.

Orange Chicken Recipe




Orange Chicken Recipe (Orange Peel Chicken)


Ingredients:

1/2 pound chicken breast (cut into bite-size cubes)
5 dried red chilies (cut into 1.5 inch length, seeded and soaked in warm water)
1 teaspoon minced orange zest
2 cloves garlic (minced)
1 inch ginger (minced)
1 stalk scallion (use the white part only, cut into thin threads for garnishing)
2 teaspoons oil
Oil for deep frying

Orange Sauce:

1/4 cup freshly-squeezed orange juice
3 tablespoons canned chicken broth
1 tablespoon soy sauce
2 teaspoons Chinese rice wine or dry sherry
1/2 teaspoon sesame oil
1 teaspoon rice vinegar
5 teaspoons sugar
1/8 teaspoon white pepper powder
1 teaspoon corn starch
Salt to taste

Frying Batter:

1/2 cup water
2 oz. all-purpose flour
1 oz. corn starch
1/2 teaspoon baking soda
1/2 egg
1 teaspoon cooking oil
1 small pinch of salt

Method:

Mix the orange sauce ingredients and set aside.

Mix the frying batter and dip the chicken meat into the batter. Heat up a pot/wok of cooking oil. When the cooking oil is hot enough for frying, drop the chicken pieces into the oil and deep fry them until they turn golden brown or crispy. Transfer them out onto a plate lined with paper towels to soak up the excess oil.

In a wok, add 2 teaspoons of cooking oil and quickly stir-fry the minced garlic and ginger until aromatic. Add in the dried red chilies and toss around until you smell the spicy aroma. Follow by the minced orange zest and then chicken. Quickly stir the chicken around before adding the orange sauce mixture. Continue to stir-fry until the sauce thicken. Dish out, garnish with the scallion threads and serve immediately with steamed white rice.

Sweet Potato and Corn Pudding

Sweet Potato and Corn Pudding

Ingredients:

2 teaspoons butter, room temperature
3 tablespoons plain bread crumbs
1 tablespoon olive oil
8 strips bacon, chopped into 1/2-inch pieces
3 ears fresh yellow corn, shucked and kernels cut from the cob
1 cup small diced onion
1/2 cup small diced bell pepper
1/2 cup small diced celery
1 tablespoon minced garlic
2 teaspoons salt
1/4 teaspoon cayenne pepper
2 cups heavy cream
1 cup whole milk
6 large eggs
1 (12-ounce) sweet potato, roasted and strained through a fine sieve, about 1 cup
1/4 teaspoon black pepper
1/8 teaspoon grated nutmeg
1/2 cup freshly grated Parmesan
1/2 cup yellow cornmeal


Directions:

Preheat the oven to 350 degrees F.


Butter the bottom and sides of an 8 by 2-inch square (8 cups) casserole dish with the butter. Sprinkle the bread crumbs evenly on the bottom and sides of the dish.


Set a 12-inch saute pan over medium heat and add the olive oil and bacon. Cook the bacon, stirring occasionally, until most of the fat has rendered, and the bacon is crispy, about 6 to 7 minutes. Add the corn to the bacon and cook, stirring often, until the corn is slightly tender, about 5 minutes. Add the onions, bell pepper and celery and continue to cook until the vegetables are softened, about 5 to 6 minutes. Add the garlic to the pan and saute for 30 seconds. Season the vegetables with 1 teaspoon of the salt and the cayenne pepper. Set the pan aside and allow the vegetables to cool.


In a large bowl, combine the heavy cream, milk, eggs, sweet potatoes, remaining teaspoon of salt, black pepper and nutmeg. Using a whisk, beat the cream mixture until frothy. Add the Parmesan, cornmeal, and the cooled corn mixture to the bowl. Stir to mix well and pour into the prepared casserole dish.


Place in the oven and bake until the center is set and the top is deep golden brown, about 1 hour. Be sure to turn the casserole dish around after 30 minutes.


Remove from the oven and allow to cool on the counter top for at least 15 minutes before serving.

Peanut Tofu Wrap

Peanut Tofu Wrap



Ingredients




  • tablespoon(s) store-bought Thai peanut sauce
  • 1 8-inch whole-wheat flour tortilla
  • 2 ounce(s) thinly sliced seasoned baked tofu
  • 1/4 cup(s) sliced red bell pepper
  • 8 thinly sliced snow peas

Directions
  1. Spread peanut sauce on the tortilla. Place tofu, peppers and snow peas in the center; fold the sides over the filling and roll up.

Wonton Soup







Ingredients
250 g peeled uncooked prawns, de-veined and coarsely chopped
250 g minced pork
1 tsp salt
1/2 tsp freshly ground white pepper
1 1/2 tsp light soy sauce
2 tbsp finely chopped spring onions
1 tbsp Shaoxing rice wine or dry sherry
1 tsp sugar
2 tsp sesame oil
1 egg white, lightly beaten
250 g wonton skins
1.2 litres chicken stock
1 tbsp light soy sauce
1 tsp sesame oil
chopped spring onions, to garnish



Method
1. Put the prawns and pork in a large bowl; add the salt and pepper and mix well, either by kneading with your hands or by stirring with a wooden spoon. Then add all the other filling ingredients and stir them well into the prawn and pork mixture. Cover the bowl with cling film and chill for at least 20 minutes.

2. Put 1 tbsp of the filling in the centre of the first wonton skin. Dampen the edges with a little water and bring up the sides of the skin around the filling. Pinch the edges together at the top to seal; it should look like a small filled bag. Fill the remaining wontons.

3. When the wontons are ready, bring the stock, soy sauce and sesame oil to a simmer in a large pan. In another large pan, bring salted water to a boil and poach the wontons for 1 minute or until they float to the top. Remove them immediately and transfer them to the pan with the stock. Continue to simmer them in the stock for 2 minutes. Ladle into a large soup tureen or individual bowls. Garnish with the spring onions and serve at once.
